Light and refreshing this is a drink you will crave again and again. If you are not familiar with Mezcal, it is made from any agave plant using oven-roasted pina (the center of the agave). Known for its smoky flavor, it is fast becoming the popular liquor of choice found in many craft cocktails across the United States. This pairing of pineapple and jalapeño is a match made in heaven. Here’s the recipe:
Pineapple-Jalapeno Mezcal Margarita
1.5 oz Grand Mayan Ultra Aged tequila (or other reposado tequila)
1.5 oz Mezcal
4-5 oz pineapple juice (fresh or canned)
1/2 jalapeno, diced and muddled
10 sprigs cilantro, muddled
Dash of Sriracha Salt http://www.salts-of-the-earth.com (you can also use regular salt)
Combine all ingredients in large cocktail shaker. Shake vigorously. Rim highball or tumbler glasses with Sriracha salt. Strain shaker over ice into glass and serve. Garnish with fresh pineapple if you like.
