Say aloha to any celebration with this tropical treat. With the warm sun shining and mint bountiful in the garden, late spring and early summer is an ideal time to enjoy a mojito with a vodka twist. Yes that’s right a vodka mojito carries the same minty flavor with a lighter taste than rum. Add a little pineapple and you have a concoction to imbibe that will transport you to paradise. Made with fresh pineapple this cocktail is naturally sweet, but you can also add simple syrup for a more traditional mojito.
Pineapple Mojito
5-7 large mint leaves
2 oz Cathead Vodka
2 oz pineapple puree (take fresh pineapple and puree in Vitamix or blender)
Simple syrup to taste (if needed, we enjoy ours without it)
Club soda
Directions:
Fill large cocktail shaker half way with ice. Put in mint leaves and muddle until chopped up in ice.
Add 2 ounces rum and 2 ounces pineapple purée to cocktail shaker. Add simple syrup if desired.
Shake vigorously until outside of shaker is frosty, about 30 seconds.
Strain over ice into a highball glass and top off with club soda. Garnish with a pineapple wedge and serve.
